Sugar Candy

My mom made rooster and fish shaped lollipops for us when we lived in Russia


And making these today brought back lots of sweet childhood memories.

Ingredients:

1 cup sugar
1 Tbsp butter

(I made a double batch to show different ways to make them)

Directions:

1. Melt the butter in a sauce pan on the stove on low to medium heat, do not let it boil.



2. Add the sugar and mix.


3. Stir constantly on medium to medium-high heat just until the sugar
has completely melted.




The liquid should be light brown in color and thick-ish

Be careful not to let it get too hot
because the sugar will burn
and will not taste very good. 

(although when our mom did burn it once or twice, we still loved them)
(something about kids and sugar... good even when it tastes bad lol)

4. Pour the liquid into each cavity of the mold and insert a lollipop stick

oops... I overfilled them a bit..

5. Refrigerate for 30 minutes to an hour

Serve and enjoy!


You can use any candy mold
I ordered mine on eBay a few years ago...
it came straight from Ukraine...
(although I was looking for one that had fish and rooster shapes,
I had to settle for the elephant, wolf and bunny)

but if you don't have any molds at all...

 you can pour the syrup into small spoons
refrigerate for 5-10 minutes and then lick it off the spoon
(my brothers used to do that). 

OR
pour into circles onto a parchment paper lined cookie sheet
 lay the lollipop sticks halfway into the circles
(make sure you turn the stick in the syrup to cover it)
refrigerate 5-10 minutes and then enjoy

OR
pour onto a parchment paper lined cookie sheet
refrigerate 5-10 minutes and then break into pieces
