Meal number three from the two rotisserie chickens
Ingredients:
2 Chicken breasts and 2 thighs (bags #7&8)
1/4 cup of flour
1 egg
Half of a medium onion and a couple garlic cloves, smoothed in a blender
Salt & pepper to taste
For the coating:
4-5 eggs, beaten
Dry bread crumbs or ground quinoa
Directions:
Preheat the over to 350 degrees.
Chop the meat until it looks ground (on the right)..
you could use a grinder, but I didn't feel like washing the grinder parts ;)
Mix the meat, egg, flour, onion/garlic mix, salt and pepper together.
Form the nuggets, dip into egg, then the bread crumbs..
and place on a cookie sheet.
The top ones are coated in bread crumbs and the bottom ones in quinoa.
I ran out of bread crumbs and ground up some quinoa.
Bake for 10-15 minutes at 350
