Peanut Butter Cheesecake Bites

     A keto diet is 75-80% fat, 20% protein, and 5% or less carbs. Sometimes I don't consume enough fats and need a boost. Here's a yummy fat bomb recipe I made this week.


8 oz of cream cheese, softened
1/2 cup of creamy peanut butter (get the kind that has no sugar)
1 tsp vanilla extract
1 cup of almond flour


  • Mix the cream cheese, peanut butter, and vanilla extract in a medium-sized bowl with an electric mixer, scraping down the sides of the bowl as needed.
  • Chill mixture in the fridge for 30 minutes.
  • Spread the almond flour on a plate.
  • Drop approximately one inch scoops onto the almond flour, making sure to coat them very well and roll into balls. Should made about 25 balls.
  • Refrigerate for another hour before serving.
  • Enjoy!
