Almond Creamcheese Pancakes


     We love pancakes for breakfast, but it's a no-go on the keto diet. I needed, yes, needed to find a substitute that's just as delicious and these keto approved pancakes are just that!

Ingredients:

1/2 cup plus 1 tbsp almond flour
4 oz full fat cream cheese
4 eggs
Oil for frying (I love avocado oil)

Directions:

  • Mix all ingredients in a mixer on medium-high speed, scraping the sides of bowl down as needed.
  • Pour 1/4 cup of batter per pancake, fry in oil in a pan over medium heat. Flip over once the center begins to bubble. Bigger pancakes seem to flop, so don't make them too big.
  • Makes about 10 pancakes, so I double the recipe for my small army.
