Beef, Potato & Bell Pepper Skillet



      Ever have one of those nights where you stare into the fridge hoping dinner will just magically appear? That was me… I stared and stared and then started grabbing what I had: beef, potatoes, carrots, bell peppers, onions, garlic, and a few seasonings. A splash of sesame oil and soy sauce pulled it all together, and dinner was done. It’s hearty, colorful, and packed with flavor… plus, it’s all made in one skillet!


Ingredients:

(this fed the 9 of us and there were no leftovers!!)


  • 2 lb stew meat, cut into smaller bite-sized pieces
  • 6-8 medium potatoes (I leave the skin on)
  • 2–3 bell peppers, chopped into squares (use a mix of colors if you can)
  • 1–2 small carrots, diced
  • 1 medium onion, chopped into squares
  • 4-6 garlic cloves, minced
  • Green onion, for garnish
  • 3 tbsp oil
  • 1.5 tsp smoked paprika
  • 1 tsp ground ginger
  • Salt and pepper to taste
  • 2 tbsp sesame oil
  • Splash of soy sauce


Instructions:


1. Prep the potatoes
      Parboil the potatoes for about 3–5 minutes, just until slightly tender. Drain, let cool, then dice into cubes and set aside.


2. Sear the beef
      Heat 2 tbsps oil in a large skillet over medium-high heat. Season the beef with salt, pepper, paprika, and ginger. Sear in batches (don’t overcrowd the pan) until browned on all sides. Remove and set aside.


3. Cook the potatoes
      Add another splash of oil if the pan looks dry. Add the diced potatoes and cook until golden and cooked through, about 10 minutes, stirring occasionally.


4. Add the veggies
      Toss in the chopped onion, carrots, and bell peppers. Sauté for 5 minutes until they’re tender but still vibrant. Add the minced garlic and cook for 1 more minute.


5. Bring it all together
      Return the beef to the skillet. Drizzle in the sesame oil and a splash of soy sauce. Adjust the seasoning with more salt, pepper, paprika, or ginger if needed. Stir well and cook for another 1–2 minutes to let the flavors meld.


6. Serve
      Spoon into bowls and top with chopped green onion. Enjoy!
